The Double Adverb BBQ CHICKEN PIZZA. Don't Judge.




I'm probably going to be judged, and judged severely on a couple things you're about to see.

But I'll take the judging and hold my head high, because hubby totally gave me the "double adverb" approval.  

My husband is a man of few words, so when he actually doubles up on words to describe how much he likes something, then you know you've done something right.

So if you start to judge me, just think about the whole, glass-house-stone thing.

Cause when people taste this, you're gonna get the ole' double adverb from people, and you will be glad you didn't rush to judgement.



2 small grilled chicken breasts
2 to 4 individual sized ready-made pizza crust or 1 regular size
4 to 8 slices fully-cooked Microwave bacon
Your favorite BBQ sauce (one with a bit sweeter taste works the best)
Mozzarella Cheese
Ranch Dressing


Preheat oven to 400 degrees.

I mention the "individual sized" ready-made pizza crust because inevitably, someone in the household does not like BBQ chicken pizza.  So by using the individual sizes, everyone can have the type of pizza they want.

As for the BBQ sauce, I believe a slightly sweeter sauce works the best for this recipe.  The saltiness of the bacon, and the grilled chicken pairs really well with a subtle sweet flavor.

Pour the sauce onto the prepared pizza crust and spread around with the back of a spoon.


One of my very favorite BBQ sauces is Lil Smokers, made right here in Kansas City.  Their Sweet N Sassy flavor is pretty much one of my all-time favorites. The name sums it up. It's sweet but has a sassy bold flavor so the sweet doesn't overwhelm the taste.

JUDGEMENT Time Number 1:

Ok, here is where some will judge.

I'm just gonna come right out and say it.

When I make BBQ Chicken Pizza..........I walk right up to the counter in the grocery store where they have the Gi-Normous bowls of pre-made potato salad, egg salad, broccoli salad, and baked beans and stuff.

You know the area.

Where the lady behind the counter, scoops you up a half pound of this or a quarter pound of that.

Well, located in that same area, most grocery stores carry already grilled chicken breasts.


Please try not to judge.

Listen, when you're in the mood for BBQ Chicken Pizza, do you really want to go outside and grill a bunch of chicken breasts first?

Unfortunately, we didn't have any left-over grilled chicken, and honestly, I didn't feel like pulling apart one of those Rotisserie chickens.

So one day I was being lazy, and I tried one of those....you know....pre-made grilled chicken breasts.

And honestly, since I got the "double adverb" review from hubby, why change a good thing.

Dice up your chicken breast (however you chose to acquire it) into chunks and place on top of the BBQ sauce.


JUDGEMENT TIME #2

Again with the judging.

Yes, I bought Fully Cooked Microwave Bacon.

Again, in the case of making this recipe, Microwave bacon is perfectly fine.

Keep remembering the double adverbs that will be coming your way.

Microwave the bacon slices per package directions.  Use 2 slices per individual pizza crusts.  If you are not using the individual crusts, use 4 to 5 slices for the regular size crust.

Sprinkle microwaved bacon on top of chicken.


 Sprinkle some finely shredded Mozzarella on top of your chicken and bacon.



Place your pizza, directly onto your oven rack.  No need for using a cookie sheet.

Tip when taking out of oven: Since the pizza is baked directly on the oven rack, taking it out can be a bit tricky.  I like to hold a cookie sheet directly up to and even with the oven rack, and then I use my pizza cutter to slide the hot baked pizza right onto the cookie sheet.  Once the pizza is on the cookie sheet, I slice with my pizza cutter.

Cook until cheese is melted and bubbly.


 Now is the time where you are either going to judge me once again or thank me.

And if you're pushing for the double adverbs, then you'll thank me.

Plus, I don't know if I can take any more criticism today.

Pour about 1/4 cup of Ranch Dressing into a Ziploc baggie.


Be sure to try and pour the dressing directly into the corner of the baggie.



With a pair of scissors, snip a teeny tiny bit from the corner of the baggie.

Gently drizzle a thin amount of Ranch Dressing on top of the pizza.

 




Stand back and wait for all those "people of few words" to break out the double adverbs.

"This is really really good"

An adverb is a word that adds information to a verb, an adjective or another adverb.

Example: "This BBQ chicken Pizza is really really good".

Mama Mia Says So - Deep Dish Pizza Pie


New York.  Chicago.  New York.  Chicago.

Mama Mia the choices. 

Deep dish or thin crust?

Mama Mia is shaking her Italian fist at you right now, and saying in her very heavy Italian accent "Listen-a Here.  You get into-a the keetchen, and make-a this for-a  your fam-a-lee"

If you want some crusty, cheesy, hearty pizza, make Mama Mia happy, which in turn will make your family happy. 

Trust Mama, she knows her pizza pie.


1 (1 lb) loaf of frozen bread dough, thawed
1/2 lb Jimmy Dean Regular sausage (half of the roll)
1/2 lb. hamburger
1 (14 ounce) can petite diced tomatoes
1 c. diced mushrooms
1/2 c. diced frozen onions (or fresh)
1/2 tsp. dried oregano
2 c. shredded Mozzarella cheese
1/2 c. shredded Parmesan cheese
Olive Oil

Ok, I have to tell you.  I put this recipe off for literally a couple years, all because of the "frozen bread dough" ingredient.

I was afraid.

But Mama Mia says  (in her strong Italian accent again)  "Don't-a be scared"

Frozen bread dough, for those of us that had never really used it before, comes in packs of 3 and 5.  They are cute little one pound bundles, literally of frozen bread dough.

Rhodes bread dough is the most popular and can pretty  much be found in any freezer section in most major grocery stores.


The part that scared me most about this recipe was how to thaw the darn thing.

The back of the bread dough package has 3 methods of thawing; Regular Method, Refrigerator Method, and Speed Method.

Can you guess which method I always use?

You guessed it.  Speed Method.

Now I know this is not normally the type of recipes I like, or type that I post, because this takes a little extra time and effort, but trust Mama. 

This is incredible!

Thawing Bread Dough Procedure for ELECTRIC oven only:
If you have a gas oven, then you will have to use one of the other methods mentioned on back of bread package.

Spray loaf pan with Pam.

Place frozen bread dough in loaf pan and set aside.

Preheat your oven to 200 degrees.

While the oven is heating up to the correct temperature, place 2 quarts of water on the stove to boiling.

Once water has come to a boiling point, pour water into a 9x13 inch pan.

Once oven has reached 200 degrees, turn  oven OFF. Place the 9x13 pan of water on the LOWEST rack in your oven and place the loaf pan with the frozen bread on the middle rack in the oven.

Close oven door and forget about it for about 2 hours.

Package says it could take up to 2 to 4 hours but I've done this so many times and it always takes about 2 hours. 

KEEP oven door closed the whole time.  After about 2 hours, your dough should magically look like this.


Ok, now is the easy part.

Once you notice the bread has risen about 1 inch above your pan, as showed in the picture above, its time to start to fry your half pound of Jimmy Dean and half pound of hamburger with your onions.  Halfway through, add your mushrooms and Oregano.

Once the meat is cooked through, drain.

Take your thawed bread dough out of the oven, as well as the 9 x 13 pan of water.

Turn oven back on, and preheat to 350.

Empty the water from the 9 x 13 pan  and wipe it with a paper towel to get all the moisture out.

Coat the 9x13 pan with Olive Oil.  Be sure to coat up the sides too.

Take your thawed bread dough out of the loaf pan and spread into the 9x13 pan.  Press the dough up the sides.

Spread the hamburger/sausage mixture onto the dough.

Sprinkle with the Parmesan cheese.

Take the can of diced tomatoes and drain well.  Spread the tomatoes over the top of the Parmesan/Meat mixture.

Sprinkle top with Mozzarella.


Bake for 25 to 35 minutes until the cheese is all bubbly and the crust is all.....well you know...crusty.





Oh this crust......




Now go on, get that bread dough a-thawing.

Mama Mia, this is one incredible deep dish pizza.

You know it's gonna be good.  Mama says so.

Don't Knock it Till Ya Try It. CANADIAN BACON & SAUERKRAUT PIZZA


I remember as a kid my dad would always say "Don't knock it till ya try it".

I never paid any attention to what he really must have meant by that comment, nor did I ever "try it". 

I would immediately just form a negative opinion and never look back.

But years have passed, and I've gotten older, and I guess you could say wiser.

I wish he was here today to see me eat Sauerkraut.  I could proudly say "Look Dad, I tried it, and you were right all along!"

So, if you "think" you hate sauerkraut, well you know.......Don't Knock It!


1 package (3) individual ready-made pizza crusts - I like Thin & Crispy, but pick whatever kind of crust your little heart desires
14 ounce can Saurkraut
8 ounce can Pizza Sauce
8 ounces Canadian Bacon
Freshly Grated Parmesan Cheese
Freshly Grated Mozzarella Cheese

This will make 3 individual Pizza's, or if you like, you can use the regular size ready-made pizza crust and make it that way. 

I just prefer the individual pizza crust because there is always someone in the family who "Knocks it before they try it!"  Know what I mean?  So they just get plain cheese or Canadian Bacon only.

You will however, have left-over Sauerkraut no matter which choice you go with.  A 14 ounce can is the smallest can I could find. You probably will only need about half that amount (But you can save the rest for when you make a delicious Reuben Sandwich)

Preheat your oven to 400 degrees.

Spread your pizza sauce nice and evenly over your pre-made crust.



Then sprinkle the sauce with your freshly grated Parmesan Cheese.


Now, some might call me picky.

I just like to say I'm a "neat eater".  This is why.  Most of the Canadian Bacon comes in round slices, like this:


Personally, I like to dice my ham up in little squares.  That way, I get a nice piece of ham with every dainty bite.  But some manly men, might like you to just plop down the whole slice, right on that there pizza.  So do whatever you feel you need to do.

Now is the time to take your can of Sauerkraut and drain it and put it in a bowl. Don't let the smell frighten you!

Take your hands, don't be afraid, and pull out some of that Kraut, and spread it all over the ham in one nice thin layer.


On top of your Sauerkraut, spread your freshly grated Mozzarella Cheese.

Now slide this little pretty right onto your oven rack.  No need to use a cookie sheet.



Bake at 400 for about 12 minutes. Keep watching it.

That's what the oven light is for.



 You're not gonna get melty wonderful stringy cheese like that with Packaged Pre-Shredded Cheese.  No Sir Ree!

Pizza Day for Grown-Ups

What's the one thing kids who are picky eaters will always eat (besides chicken nuggets)?

Pizza right?  And what do they normally want on their pizza?

CHEEEZE only!  or PEPPERONI!!!!!!!!   Ugggg!

Us grown-ups have to stand up for our rights.  We love pizza too!

We're sick to death of Pepperoni! 

Well today is pizza day for adults.

Mini Veggie Pizza with Spinach, Tomatoes, Mushrooms, Cream Cheese.....all the stuff kids won't dare let you put on their pizza.  Now that's what I'm talking about!

Here are the cast of characters:



1 Package of Individual Thin Crust ready-made pizza crusts (I like to get the whole wheat, but the individual whole wheat crusts are hard to find)

1 Tub of Garden Vegetable Cream Cheese (or if you like Garlic Onion flavor, that will work too)
Grape Tomatoes, diced into thirds

Baby Portabella Mushrooms, diced

Bag of Baby Spinach

Cube of Mozzarella, shredded (please shred yourself and don't buy the pre-shredded.  Yuck!)

Freshly Grated Parmesan Cheese (I forgot to put that in the photo)

Assembly:

Take your individual ready-made pizza crust, and spread it with the cream cheese flavor of your choice.
Notice we are not going with your typical "kid choice" red pizza sauce. 
Adults Unite!

Now start sprinkling on your baby spinach leaves, then the mushrooms, then the tomatoes.


Now don't forget to pile on the freshly shredded Mozzarella cheese.  You heard me didn't you?  "Freshly Shredded".  Please, I beg of you.


Ok, now pop this little darling into a pre-heated 400 degree oven.  Put it directly on the oven rack, not on a cookie sheet.


HURRY HURRY HURRY........OH HURRY UP. Sorry, I forgot I'm suppose to be an grown-up.



Ah mine all mine.  Don't forget to Sprinkle Sprinkle Sprinkle with Parmesan.

Only one bite and I feel like such an Adult!


Grown-Ups unite!  It's pizza day for us!   Where your kids will say "Yuck".  And you can say "Mine all Mine"

P.S.  Another one of my favorite adult combinations is sliced jalapenos with either crumbled sausage or hamburger.

Whatever your adult taste buds crave, go ahead.  It's our day!

White wine highly recommended.
